These antioxidant rich, delicious blondies are made with gram flour which is made from ground chickpeas. It is full of fibre and protein and helps give us a steady flow of energy, making it easier to concentrate and focus. It is available to buy in most large supermarkets, and we also stock it on our Little Shop here

 

Ingredients

  • Food processor / blender
  • Measuring scales
  • Mixing bowl
  • Spatula
  • Wooden spoon
  • Baking tray + parchment paper

Nuts (almonds), dairy (optional)

Directions

1 Pre-heat the oven to 170c (180c if not fan assisted)
2 Soak the dates in 150ml of hot water for a few minutes
3 While the dates are soaking grind your oats into flour - place them in a food processor or blender and blitz until flour like
4 Gently melt your butter / coconut oil in a saucepan if it isn’t at room temperature
5 Now pour the dates and the water it was soaking in (do not strain the water away) into your food processor / blender containing the oat flour and add everything else in apart from the raw cacao nibs/choc chips
6 Blend the mixture until it is batter like - if it is too dry add a little more water
7 Scrape all of the mixture out into a mixing bowl and mix in the raw cacao nibs/choc chips
8 Line a baking tray with parchment paper then use a spatula to evenly spread the mixture out, aiming for it to be 1-2cm thick
9 Bake for 20-25 mins until golden but not too brown! Allow to cool before cutting into slices and gobbling!
