Cauliflower Bites

Cauliflower is such as versatile vegetable, from cauliflower rice to fritters it really is the veg that keeps giving! This time we are making cauliflower bites, crispy cauliflower balls with a yummy cheese filling. These bites are brilliant healthy snacks, and a great addition to any lunchbox.

Cauliflowers are available all year round, however, their peak season is spring and autumn, so try them out now while they are at their peak.

Ingredients

  • 1 cauliflower head
  • 1 onion
  • 1 cup of grated cheese
  • 2 eggs
  • 1 large knob of butter (melted)

  • Food processor
  • Parchment paper
  • Baking tray
  • Mixing bowl

Directions

1 Blitz the cauliflower and onion in a food processor until consistency is fine
2 Pop into a mixing bowl with the rest of the ingredients and mix thoroughly
3 Shape into small balls and place on a baking tray with parchment paper, flattening slightly so they are disc-shaped. Even better – get the kids involved - they love shaping them into balls and squashing them on the baking tray
4 Cook on 170c for 20 mins, flip them over and cook for another 10 mins
5 Once golden brown, take the cauliflower bites out of the oven and enjoy
