Courgette and raw cacao muffins

These are truly amazing alternatives to a traditional chocolate muffin. So easy and so tasty – you simply have to try them.

Ingredients

  • 1 ripe banana
  • 1 medium courgette
  • 1 egg
  • 120g nut butter (1/2 cup)
  • 70g honey (1/4 cup)
  • 25g raw cacao (or cocoa) powder (1/4 cup)
  • 30g cacao nibs (optional)
  • 2 tablespoon flaxseeds
  • 1/2 teaspoon baking powder

Equipment

  • Blender
  • Mixing Bowl
  • Muffin Tray
  • Grater

Allergens

Egg, nuts (optional – you can use a seed butter such as sunflower seed if prefer no nuts)

Directions

1 Preheat the oven to 180c (200c non-fan assisted, gas mark 5)
2 Whizz all the ingredients in a blender except the courgette and nibs
3 Grate the courgette and squeeze as much liquid out as you can (I grate it over a clean tea towel and then squeeze it into a ball over the sink)
4 Mix everything together in a big bowl and spoon into a greased muffin tray and bake for 20 mins
