Crunchy, Dairy-Free Coleslaw

Fresh, crunchy cabbage mixed with a zesty dressing. A quick, healthy side dish that is a great addition to any picnic or barbecue!

Ingredients

  • Half a green cabbage thinly sliced
  • 1 onion thinly sliced
  • 1 large carrot grated
  • Glug of olive oil
  • 1 tbsp of apple cider vinegar
  • Juice of half a lemon
  • 1 minced garlic clove
  • Pinch of salt

Equipment

  • Large mixing bowl
  • Chopping board and knife

Directions

1 Grab a large mixing bowl
2 Prepare all of the veggies
3 Mix everything together in the mixing bowl and then enjoy!

Fun fact! The world coleslaw originates from the Dutch term “Koolsla” which is shortened from “Koolsalade” which means cabbage salad
