This recipe is so delicious we held classes at River Cottage to teach children how to make them! They are packed with healthy fats, antioxidants and nutrients that make them a filling and healthy snack, and kids LOVE making them!

Ingredients

  • 100g pitted dates
  • 100g oats
  • 100ml hot water
  • 60g cashew nuts
  • 50g nut butter (e.g. almond or peanut)
  • 40g cranberries
  • 20g dessicated coconut (optional)
  • 10g chia seeds
  • 1 lemon

  • Measuring scales

Directions

1 Soak the dates in 100ml of hot water in a small bowl for around 5 mins
2 While the dates are soaking pop the oats and cashew nuts in a blender and blitz until they have turned into flour
3 Place the flour into a mixing bowl, add the chia seeds and cranberries and mix together
4 Now pour half of the water from the dates into a blender (pour the other half away), add the dates and nut butter and blend until it has turned into a smooth-ish paste. Add a splash more water into the blender if it needs help to catch
5 Use a spatula to scrape the date paste into your mixing bowl with the other ingredients and mix everything together thoroughly
6 Next grate the rind of your lemon on the smallest grater setting and add it to the mixing bowl
7 Cut the lemon in two and squeeze the juice of one half into the mix (pop the other half in the fridge so it isn’t wasted)
8 Rub some coconut oil (or other oil) into your hands and roll the mix into balls the size of 50p coins
9 Finally roll each ball in the dessicated coconut spread over a plate (if using) and pop in the fridge for 30 minutes before gobbling!
