Nuts, dairy (optional)

Pre-heat your oven to 160c (170c if not fan assisted)
Weigh out all of your ingredients ready for mixing
If you are using dried apricots then chop them into small pieces
Next pop the nuts you have chosen to use into a sandwich bag and use a rolling pin to bash them into smaller pieces
Make sure your butter/coconut oil is soft enough to mix - you can melt it in a saucepan if it is not at room temperature
Pop everything into a large mixing bowl and use your hands to mix it all together, making sure the butter/coconut oil is fully combined
Spread the mixture out onto a baking tray trying to make it even and without too many clumps
Pop in the oven for 15-20 minutes - check after 15 minutes but wait until it turns a lovely golden colour
Wait for it to cool before transferring into an airtight container - store for 2 weeks
