Key Lime Pies

Try these Little Cooks Co style key lime pies for a fun activity to do with the kids; and a yummy, healthy snack for afters! They are packed with healthy fats from the nuts and coconut, and also have lots of lovely fibre which makes our gut microbiomes very happy 😊

Ingredients

  • 180g cashew nuts
  • 90g butter or coconut oil
  • 80g dates
  • 80g oat flour (choose gluten free if preferred)
  • 45g honey
  • 40ml water
  • 20g almond flour
  • 15g desiccated coconut
  • 15g coconut flour
  • 2 limes
  • 1 tsp vanilla essence

  • 12 hole muffin tray
  • Mixing bowl x 2
  • Small frying pan
  • Small saucepan
  • Spatula
  • Spoons
  • Scissors

Nuts (cashews, almonds), dairy (optional)

Directions

1 Pop the dates in a blender jug with 40ml hot water and then gently melt 50g of butter/coconut oil and add it to the dates
2 Blitz it all together - the dates don’t need to be completely smooth but shouldn’t have big clumps - add a little more water if needed to help them blend
3 Scrape the date mixture into a bowl using a spatula and mix in the oat, almond and coconut flours until fully combined
4 Roll the mixture into 12 equal balls and then squish them down into each hole of your tray to make the bases
5 Next make your filling by blitzing the cashews in your blender until they turn into flour (make sure your blender jug is completely dry before doing this)
6 Gently melt 40g of butter/coconut oil and then grate the skin of your limes (the zest) and squeeze 30ml of juice from them, being careful to remove any pips
7 In a mixing bowl, thoroughly mix the cashew flour, lime zest, 30ml lime juice, 40g of honey, the vanilla essence and melted butter/coconut oil and then spoon it equally on top of your bases - pop in the freezer for 20 mins to set
8 Make a decoration by gently frying the desiccated coconut with 5g of honey until golden - this only takes a couple of mins
9 Gently remove the pies and scatter with coconut topping! Store in the fridge for up to 5 days

Fun fact! The cashew is actually a seed that hangs off a fruit called a cashew apple! It is packed with monounsaturated fats which help keep our hearts healthy, as well as minerals like copper which aren’t always easy to get enough of in what we eat!
