Easter Chick Nests

Spring means new baby chicks! These little chicks as just as cute as the real thing – with their blueberry eyes and almond beaks! The lemony, cashew filling is sweet, tangy and creamy, and are a great source of protein and healthy fats thanks to the cashews and the tahini. Children who love coconut and lemon will love these little chicks!



  • 160g desiccated coconut
  • 2 large egg whites or 60 ml aquafaba
  • 30g coconut oil or butter, melted
  • 1 tbsp milled flaxseeds
  • 55g honey/maple syrup


  • 100g cashews (soaked)
  • Zest 2 lemons + 2 tbsp lemon juice
  • 50g tahini
  • 50g honey/maple
  • 60g coconut oil or butter
  • 12 whole almonds
  • 24 blueberries


  • 12-hole muffin tin
  • Mixing bowl x 2
  • Measuring scales
  • Blender
  • Zester
  • Spatula
  • Wooden spoon
  • Baking paper (cut into 12 x 12 cm squares)
  • Scissors
  • Cooling rack


Nuts (cashews), Sesame, Dairy (optional), Egg (optional)


1 Cover the cashews with warm water and ideally soak for 1 hour
2 Meanwhile, pre-heat the oven to 140c (160c non-fan / gas mark 3). Cut 12 X 12 cm squares of baking paper to fit in each hole of your muffin tray
3 Next, mix the ingredients for the base. Once mixed, spoon the about 1 ½ spoons of mixture onto the centre of the parchment. Put the parchment square into the muffin tin and use your fingers to press the base down and up the sides of the whole to create a nest. Make sure you press the mixture evenly and that the base is not too thick
4 Put the nests in the oven and bake for 25 minutes until the centre is slightly golden, but the edges darker. Leave these in the tin to cool slightly
5 Next, drain and rinse the cashews and put these in a blender jug along with the lemon zest, juice, tahini, honey/maple syrup and coconut oil/butter. Blend until smooth
6 When the nests are slightly cooled, spoon the lemon cashew mixture evenly into the nests. Decorate with two blueberries (chick’s eyes) and one almond (beak). Allow the filling to and set for 15-20 minutes
7 Store in an airtight container, these should keep for about 5 days
