Mince pie cake!

A delicious and easy way to use leftover mince pies. Feel free to swap out mince pies for Christmas cake or any other holiday sweet leftovers


  • 170g oat flour (blitz oats in your blender to make your own!)
  • 100g ground almonds
  • 175g butter
  • 3 eggs
  • 1 tsp vanilla extract
  • 90g honey
  • 4 mince pies, crumbled
  • 1 tsp bicarb soda
  • 1 tbsp cornflour
  • 2 tsp cinnamon
  • ½ tsp salt
  • 25g flaked almonds


  • Square baking tin (roughly 20cm)
  • Baking paper
  • Measuring spoons
  • Scales
  • Mixing bowl
  • Wooden spoon
  • Saucepan


Gluten, nuts, egg


1 Preheat the oven to 180c / 200c (non-fan) / gas mark 6 and line a square baking tin with baking paper
2 Cut the butter into cubes and gently melt
3 Add the oat flour, ground almonds, bicarb, cornflour, cinnamon and salt into a bowl and whisk to combine, leaving a well in the centre
4 Next, add the melted butter, eggs, vanilla and honey into the well and stir to combine
5 Crumble the mince pies into the mix and stir thoroughly
6 Spread the mixture in the prepared tin and sprinkle over the flaked almonds
7 Bake for 30 mins until the top is golden. Serve with cream!
