A delicious and easy way to use leftover mince pies. Feel free to swap out mince pies for Christmas cake or any other holiday sweet leftovers
Ingredients
- 170g oat flour (blitz oats in your blender to make your own!)
- 100g ground almonds
- 175g butter
- 3 eggs
- 1 tsp vanilla extract
- 90g honey
- 4 mince pies, crumbled
- 1 tsp bicarb soda
- 1 tbsp cornflour
- 2 tsp cinnamon
- ½ tsp salt
- 25g flaked almonds
Equipment
- Square baking tin (roughly 20cm)
- Baking paper
- Measuring spoons
- Scales
- Mixing bowl
- Wooden spoon
- Saucepan

Directions

Preheat the oven to 180c / 200c (non-fan) / gas mark 6 and line a square baking tin with baking paper

Cut the butter into cubes and gently melt

Add the oat flour, ground almonds, bicarb, cornflour, cinnamon and salt into a bowl and whisk to combine, leaving a well in the centre

Next, add the melted butter, eggs, vanilla and honey into the well and stir to combine

Crumble the mince pies into the mix and stir thoroughly

Spread the mixture in the prepared tin and sprinkle over the flaked almonds

Bake for 30 mins until the top is golden. Serve with cream!
