A great lunchbox option! Or if having them for dinner they are yummy with a poached egg on top with salad. We serve ours with Greek yogurt
Ingredients
165g sweetcorn
60g grated courgette
40g flour – brown rice, gram or oat flour would all work well
2 spring onions
1 egg
1/2 tsp baking powder
1/2 tsp salt
Olive oil for frying
Equipment
Chopping board and knife
Mixing bowl
Grater
Wooden spoon
Frying pan

Grate the courgette and finely chop the spring onions

Put everything in a mixing bowl and mix thoroughly

Heat a frying pan with a little oil

Add spoonfuls of the mixture to the frying pan (it should make around 4 fritters) and fry for 2-3 minutes on each side

Store in an airtight container for 2-3 days or freeze (making sure to properly defrost and re-heat before eating)
Fun fact! One ear of corn contains an average of 800 kernels on 16 rows (and there are always an even number of rows!)
