A great breakfast or lunch option! Yummy with a boiled or poached egg on top. You can mix up the ingredients – pea with mint is delicious.


165g sweetcorn

60g grated courgette

40g flour – such as spelt, or if you prefer gluten free then gram or oat flour work well

2 spring onions

1 egg

1/2 tsp baking powder

1/2 tsp salt

Olive oil for frying



Chopping board and knife

Mixing bowl


Wooden spoon

Frying pan




1 Grate the courgette and finely chop the spring onions
2 Put everything in a mixing bowl and mix thoroughly
3 Heat a frying pan with a little oil
4 Add spoonfuls of the mixture to the frying pan (it should make around 4 fritters) and fry for 2-3 minutes on each side
5 Store in an airtight container for 2-3 days or freeze (making sure to properly defrost and re-heat before eating)

Fun fact! One ear of corn contains an average of 800 kernels on 16 rows (and there are always an even number of rows!)
